One of the oldest indigenous Greek varietals, Savatiano is characterized by ripe apple and peach flavors as well as an oily texture. Although its cultivated in many areas of Greece, its home near Athens provides the ideal terroir. Limestone, and elevation combined with abundant sun, wind, and very dry conditions. Its mineral demeanor remind us of a Rhone valley white wine. Savatiano can age very well (7 years plus), at that point it turns towards a dry Riesling like profile, with bees wax notes, and elevated acidity.
