One of the youngest wineries on the Santorini wine scene, Vassaltis had its first vintage in 2014. Owner Yannis Valabous, took over the family owned land with the ambition to become a major player on the Assyrtiko scene. Along with a team of young oenologists (Elias Roussakis and Yannis Papaeconomou), the vision is to make a range of world class, Assyrtiko based wines, and showcase the unique volcanic terroir of Santorini. Yields are exceptionally low, thus superior fruit provides the backbone of their wines. Modern technics, stainless steel, temperature controlled tanks, French oak barrels, and a desire for experimentation, are the hallmarks of a winery that is eager to show the world what fine Assyrtiko is all about; if the first vintages are an indication, this winery is destined to become a reference in the Greek wine scene. 5 hectares (12.5 acres), 50,000 bottles annual production.
