Cuvee Monsignori 2017- Santorini
Cultivate from two centuries old vineyard on the Island of Santorini, this wine best shows the intrigue of the terroir. Minerality, structure, salinity which we all know and love from a Santorini Assyrtiko are obvious. The fruit, tart apple and apricot on the nose are inviting. The surprise herbs like sage and thyme are so pleasing.
I think I could easily pair this with grilled pork tenderloin or a Briam (roasted vegetable medley in a clay pot). Obvious choices would be a sea bass, shell fish, like scallops and grilled shrimp kabob, with a beurre blanc sauce.
Best served after a bit of decanting and chilled.
